Tiana’s Banana French Toast

It’s Disney Week on The Mum Blog – and today I’m sharing a recipe from Tiana’s Cookbook. The Princess and the Frog is definitely one of our favourite Disney movies and it’s a lovely cookbook (although you have to adapt the recipes as they’re all in American measures). This recipe for Banana French Toast is a yummy (and healthier) twist on an old favourite.

Ingredients
1 thickly sliced French loaf
1 to 2 bananas, sliced
3 eggs
A little milk
1 to 2 tablespoons butter (or marge if preferred)
1 to 2 tabledspoons vegetable oil
maple syrup to serve

Method
1. Cut a slit through the top crust of each bread slice and stuff each pocket with 3 to 4 banana slices.
2. Whisk together the eggs and milk in a shallow dish.
3. Heat the butter and oil in a frying pan over a medium-high heat. Dip each bread slice in the egg mixture, coating both sides, and place in the frying pan.
4. Cook the French toast for 2 to 3 minutes each side until golden brown. Serve with maple syrup.
